Oven Fried Chicken

This is one of my old standby recipes. We call it “Mrs. Gleason chicken” because that is who gave me the recipe about a hundred years ago. When my kids were small I would make chicken legs instead of thighs because that is what they liked then.
You’ll need:
- six chicken legs and thighs skinned and trimmed of fat
- milk for soaking the chicken
- 1/2 cup dry bread crumbs
- 1/3 cup grated parmesan cheese
- 1 T crumbled Parsley flakes
- 1/4 tsp ground pepper
- veg. oil spray for the chicken
And so we begin…
Place chicken in shallow bowl, cover with milk.
Combine dry ingredients on a shallow plate. One by one, coat pieces on all sides. Place on cookie sheet covered in foil for easy clean up. Lightly spray chicken with veg-oil spray. Bake in preheated 375 over for about 45 minutes.
And voila! Dinner!
